There are broadly two approaches:
Workflow wait - you trigger a workflow when a record is created and then use the 'wait' until a specific date. See blog.clickdimensions.com/.../crm-workflows-wait-versus-timeout.html and www.powerobjects.com/.../setting-up-recurring-workflows-in-dynamics-crm-2016
Scheduled Workflows - Where you define a workflow to run on a recurring schedule - blogs.msdn.microsoft.com/.../scheduling-recurring-workflows-in-microsoft-dynamics-crm-2011-online-and-on-premise
Both have pros and cons. If you are simply wanting to send a reminder email before an appointment - then probably the first option where you create a workflow on create of an appointment and wait until 1 day before the scheduled date. The clever thing about these kind of workflow waits is that if the scheduled date changes, then the workflow wait adjusts it's self.
