What are the step required to make an advance payment toward a customer account (ie downpayment)

Create a layaway for any item, override the deposit with a Shift + F9, tender the sale.
When they come to pickup the item, recall the layaway, delete the item, add the new item, finalize the sale, collect the money less deposit

Is it possible to receive a advance payment from a walkin customer (one time purchase) without going the layaway method
Not really.
