When we click the activities drop down from the account it just spins indefinitely, has been happening since Monday morning but worked fine before then. Is anyone else experiencing this or have idea on how to resolve?

If you changed nothing and you experience that kind of an issue - that means Microsoft deployed some kind of update to your instance that caused the behavior you see. I would recommend opening a ticket with Microsoft.

So you were seeing Loading... because you did not have any activity entity added to your model driven app?
So this issue fixed when added any activity type entity to your model driven app?
You can change the setting from admin center if you want to see them as before
