I have a client that is evaluating other Marketing Platforms as well and they really want the system they choose to be able to post content and track interactions with Blogs as they would with other social media posts. I'm not finding any information on the Microsoft Documentation about if this is possible or if it is in process. Does anyone have any resources to help guide me to the answer or have you been able to create this as a custom channel?

It is possible by creating a custom channel, see the documentation here:

Overview of custom channel (Dynamics 365 Marketing Developer Guide) | Microsoft Docs

At the moment this functionality is not available out of the box in the product.
