Overshipping an item from order fulfillment screen

I am new to this forum so please forgive me in advance if I ramble or ask a question in the wrong area. We are in the final stages getting ready to "go live" and have run into a situation. We are a job shop that will frequently overship parts(industry standard 10%). If we create an order for say 250 pcs and when it get to shipping we have cut 275 pcs we cannot make the quantity higher than the order quantity. The plan is to have the shipper fill in the packing list, print the packing list and hit "order fulfilled".  The only way we can see to do this is to go back to the order screen and change the quantity and then fulfill the order. This also takes a lot more time and at the end of a busy shipping day time is just not there. This seems like a huge workaround, so I have to believe there is a better way. Any thoughts????
