When I switch over to the unified interface app then the icon is replaced with the default jigsaw piece.

I'm afraid I spoke too soon. I amended the icons from client extensions and although they have changed in the preview they are still set to the jigsaw piece in the app. Can you advise?

To get your custom entity icons, you would need to go to edit the site-map. This is really straight-forward and can be done here:
Customizations -> Client Extensions -> (look for your particular application), then navigate to the sub-area 'Sales Properties' and then, on the right hand-side, change the Icon. (see screenshot below)
