Hi Everyone, I've decided that after I finish an opportunity I want the customer to become an account. How would I go about doing this? Thanks

An opportunity is typically associated with a potential customer before its closure. However, if you would want to create an account when you close the opportunity, you can do so using workflows/plugins on Status Change.

Out of the box CRM needs Account or Contact to become the Potential Customer, so even before your Opportunity is closed as Won, you already need this Account/Contact in the Opportunity regardless its status.
So what I can suggest, you can create either a dummy account, so-called Potential Customer or you can create Account, but please give a flag, a field, Account type or something, "Customer" and "Potential Customer"
Then you can use workflow or plugin, once the Opportunity status is changed to Won, then the action is either to create an Account (if you previously was using dummy Account) or you update the flag status (if you choose number 2 for the method)

How about this, could I create a workflow or dialog to convert the opportunity to an account upon completion - Only if a field says new customer? Could something like that work?

--> By default before any completed, the Opportunity will need a tied account, so it wont be possible, unless you have a dummy account to tie first.
You can run a Plugin or Workflow on the Opportunity Form to create an Account / Contact based on whether the Customer is New or Existing on Opportunity Won.
Defining an Account or Contact before the Opportunity as Won is not mandatory in CRM. Tested on CRM 2013 and 2015
You can create three new fields in Opportunity Form
Customer Definition (Mandatory)
OOB fields need to be hidden accordingly.
There will be an OnChange event triggered on Customer Definition field which will make new fields visible. If Customer Definition is New set visibility true for
and hide OOB Fields (Account, Contact)
or Else if Exiting hide the newly created field and make OOB field visible.
For New Customer the user will have to enter a Name of their choice.
On Opportunity Won, run a workflow (a plugin can also be registered) which will create a Contact or Account depending on whether it is a new Contact or Account. Also remember to set these new field values to OOB field (because you may be using it in Reports, Views, etc)
