I have GP 2013 client installed on PC1 and Pointing to Server1
Can I have GP 2016 Client also installed on the same PC1 but pointing to Server2 ?

Yes. When you are installing GP 2016, be sure to enter the correct name for your SQL Server (Server2). You could also install GP 2016 pointing to Server1, so long you use the Named System Database option to change the name of the system database.

As Mariano pointed out, this is a supported configuration... both options are valid (either named DYNAMICS instance or separate SQL instances).
I have a test GP server where I host 3 different client versions, all pointing to a different SQL instance with GP 2013, 2016 & 2018
Be careful to not mix up your shared dictionaries if you have some. And be careful also with the deployment of your Excel & SSRS reports..

Just a quick note on this - while it works for Dynamics GP, it may not always work for add-in products, including Integration Manager. If you do need this for other products, I would recommend checking with the companies that make the products to confirm.
