I need increase the character limit for an inventory control field from the default of 11 to 15. How can I do this?

The Item Number field is 30 characters can cannot be changed. You cannot change any of the existing table definitions in GP.
It is possible to add additional fields as a customisation with the data stored in a different table. You can use this to extend other fields, but not key fields, especially not the primary key field.

David is right when it comes to change default fields in GP.. not a good idea to customize them as they might get reset with the next service pack or version upgrade, not to speak from the unpredictable results of such a customization, as the same field specs is used across multiple tables in GP.
For custom data fields, the easiest for non-developer customer is to reach out the Extender product from eOne which allows you to define up to 30 additional fields per GP form.
