How do I change the theme and logo in Dynamics 365 Sales?

I found the following link but I do not have a Sales Settings > Advanced Settings > Branding and Theming option (I am the admin)

Are you using sales professional?

If not, you should go to Advanced Settings:

https://learn.microsoft.com/en-us/power-apps/maker/model-driven-apps/create-themes-organization-branding

Thank you. The Dynamics UI is atrocious.

I had turned on the new look and doing so prevented Themes from working..
