We have 3 business units. Records owned by userd or teams. What is the best solution to define for which business unit the record belongs.

So you would like to give records an identifier to distinguish their business unit, right?
In this case, your solution is feasible.
In addition, records have an OOTB field "Owning Business Unit", it shows the business unit of the record Owner, but it is not searchable and cannot be added to the form or view. So create a custom Business Unit lookup field and use the workflow to copy the value of "Owning Business Unit" to it.

The idea was to use owningbusinessunit. But it is not usable field for internal purposes only.
So the solution we chosen to add field of BU and populate it with workflow at creating and assigning record.

Specifically, the record belongs to its owner.
Both the user and the team have a Business Unit field, which means that you must select a business unit for users and teams when you create them.
The following examples illustrate business units in the security role.
Entity X has a record, its owner is user A who belongs to business unit B.
Business unit B is subordinate to business unit C.
Business unit B is not subordinate to business unit D.
