Out of the box workflow log does reasonably good job in providing details on why a specific process failed. And you can set it to keep logs even if it did not fail. You will have to make sure you have some maintenance job in place to cleanup the logs as it might take a lot of storage space in the long run.
One thing you could try is to enable plugin trace and set it to log all and see if you get any additional logs than you will normally in the workflow

As you mentioned you are using online , so there is no other way to debug or see any log for OOB workflow except process instance.

you have to check via the process instances, there is no other tool to debug the oob workflow.
