Last week we had our inventory count, while the same morning some older Production Orders were set on finished.
Which now has given us problems, because they have posted consumptions.
Is there a possibility to adjust the stock given a specific date, eg stock on this day was x?
given the thought there in the week between then and now, other consumptions have been made.

You can do Physical Inventory Journal based on a specific that.
However, you will have an issue if you end-up needing to do negative adjustment and the stock is already being consumed on a later day. This will need to be handled manually.
