what is the use of the Batch Approval in Dynamics GP if the user can simply remove the batch and post the transaction, bypassing this control stage ?

There is an option that you need to consider along with the batch approval which is (Allow Transaction Posting). Just prevent the posting on the transaction level and activate the approval on the batch level.
