In entering a batch at the Frequency section (Field), I enter "monthly" instead of "single use". Now the same entries keep repeating each month. How do I turn it off i.e. how do I stop the entry from automatically appearing each month.

Entries do not recur without being part of a recurring Batch. Someone is either posting a Recurring Batch each month or perhaps there was a Deferral Entry created in Revenue and Expense Deferrals. Can you post a screenshot of the entry you're referring to?
Change the setting from Monthly back to Single Use. Any setting other than Single Use implies a recurring batch frequency.
