When we go to finish a sale the POS will freeze and take any where form 30 sec. to 2 mins. to print a reciept, it is an epson printer. We have reloaded the POS software to no help, all other functions work fine.

1- Check printer driver is compatible with windows version and machine type

2- check computer memory when you print receipt

3- check if there is any customization in receipt enter you in infinity loop

    Are you using OPOS Printer?

If yes, try to stop the Printer Spooler service and do a test sale to see if it fixes the issues.

Some how when you configure the printer as OPOS printer, the Window auto detects/installs the printer driver for that printer if it is connected via parallel port

So you will have  OPOS printer and Window printer for same device; hence a conflict occurs

Also check whether there are any Tender End / Print Hooks in your POS. But highest chance will be as said by Nhat Le

What printer are you using? I've seen problems from TM-T20II.

Somehow TM-T20II does not work with OPOS. I've used Windows Driver to run.

Are you printing a logo to the printer?  This can be very slow with an opos printer with a slow baud rate.  This would look like the POS is freezing.

If yes and using opos, increase the baud rate on the printer.  If you tell us the brand and model of printer we could help.  Also need to know if opos drivers or windows drivers.
