Hi,
CRM does not offer a maintenance screen by default. However, there are some possibilities to do what you want.
option 1:
In the blog below, you see a creative solution and how it was implemented:

The idea is to have an alternate website that shows a maintenance page (be sure to have a 404 redirection in place). Whenever you want to do maintenance on your CRM on prem, you change the port of the CRM environment (e.g. port 80 --> port 8080) and you start the maintenance website.
All users navigating to your CRM will end up on the maintenance page and you can do your maintance on crm via the alternate port.
As soon as you are done, you turn of the maintance website and switch the port back of the crm server
Option 2:
An other option might be (found on community.dynamics.com/.../147507)
Set all users to Non-interactive via the SDK (requires coding but it's not rocket science) and then revert them to Full. If you have a couple of real Non-interactive users for integration you can manually fix them at the end.
In the end it is all up to your creativity ;)
