It looks like Crystal Reports is used to generate the attachments for Electronic Document Delivery. Is this optional, or is this hard coded into the system. I've been using SSRS for a few years now and I would rather stay on SSRS.

You are correct that Crystal Reports is used. However, you should know that EDD is going away.
With GP 2010, you can send e-mail messages when you print sales documents.
There are ISV apps, like Binary Stream's E-mailer Manager, that can handle sending documents.
Rockton Software and Accountable have Dynamics Report Manager and Forms Printer, respectively, that can use SRS reports and send them via e-mail.
