I believe the default layouts you're talking about are the ones included in the demo-data. If you are starting from a "blank" environment with no demo data you can deploy a new cloud hosted environment with demo data and export it from there (as Shafeeque suggests).
You will need to take that from a Contoso demo environment. If you have an LCS account with a valid license, you can roll out a new environment with demo data. Select demo data in step 5 in the below process.
The easiest way is to export and import using data management. You can use the following entities. You can try the following.
Screen Layouts-Data Export
Layout sizes
POS button grid
POS button grid buttons
POS screen layouts
Layout sizes
POS screen layout zones
POS screen layout button grid zones
POS screen layout image zones
POS screen layout report zones
RetailTillLayoutConfigurationEntity
Use the screen designer to export and Import the design once the data is created if you face any issue
For receipts import:
Receipt Format
Receipt profile
Receipt profile line
Make sure that you run these in the correct order. You can also refer to the blog for screenshots.
