Activity/Engagement Tracking

My organization recently implemented Dynamics 365 for Sales and Customer Service. We are looking for best practices or creative ways to successfully track account activity and engagement. We want to be able to track emails, in person meetings, virtual meetings/demos, phone calls, etc. We need to see and easily report on the last time we've had an in person or virtual meeting with our clients and prospects. We need to track meaningful engagement information, so meeting date, participants, meeting notes, next steps, etc. 
 
FWIW - we do not use Teams (yet), we use Zoom for virtual meetings.
 
Please give me some ideas!

    Sounds to me like your organization would benefit greatly from the Outlook App/connector into Dynamics 365 Sales.
     
     
    This will allow your users to link meetings and emails from their own mailboxes out to Accounts, Contacts, or Sales records in Dynamics CRM. From there, it's a matter of setting up some of your reporting or metrics to determine what type of activity you would like to see.
