My foundation moved to a Dynamics-based CRM system a couple of years ago, and are now trying to upload all of our letters to our grantees into our system from Outlook.
I would like to be able to classify those e-mails as different than other e-mails. I've created a dropdown field in which one of the selections is "Grant Letters," but because the e-mails are read-only, I can't assign that classification.
I tried creating a Grant Letters entity, but converting to that doesn't appear to be an option. Any thoughts?

1. You can unlock form with javascript:
https://community.dynamics.com/crm/b/passiondynamics/posts/lock-all-fields-on-a-form-using-javascript-microsoft-dynamics-crm(setDisabled(false))
or do same thing by a Chrome extension: "Level up for Dynamics 365/Power Apps", it provides with a "God Mod" option, which is helpful to modify record that has been set to read-only status.
(Please open an email record with such URL: "orgURL/main.aspx?pagetype=entityrecord&etn=email&id=xxxx", or add a subarea for email entity in sitemap.)
Then you can edit a completed record.
2. For drop down issue:
Is your dropdown field a optionset field or lookup field?
If you would like to use entity for categorizing, then you should instead create a lookup type field.
Optionset field will only show static text values.
