We just created a new database within GP but did not select the Create a Company option. The database is displayed within SSMS but is not showing up within GP 2010.

You need to use the Create a Company from the Dynamics Utilities. Delete the Db out of SSMS and then go into the Microsoft Dynamics GP Utilities and create the db. Then it is created not only in Great Plains but also in SQL with all the permissions that you need. And if you ever decide to delete a db from Great Plains, do it within Great Plains so that all the tables in Great Plains loose references to the db. Unless Great Plains recognizes the db you can't give your uses access to it.
When you are creating the db thru Great Plains you also have the ability to copy access from another company so that all of your users can then have access without you having to set it all up.
