Is there a way to just remove the $ symbol from a currency field without having to change the currency field to a decimal?
If yes, how?

As per OOB behavior, we cannot remove Currency symbol from currency field. If you want to use, then you need to create a Whole Number/Decimal Number Type field to use the same. but this method does not seem to be what you want.

This is just a field on a form.
