I need to demonstrate Sales Professional App. However I am unable to create trail instance with Sales Professional app. Please let me know how can I create Sales Professional App in trail CRM.
when you create a new trial and setup the instance you have the option to decide if install the dynamics 365 apps and which apps (like Field Service) you want to add.
Try creating a new trial at https://trials.dynamics.com

If you already have setup trial then just go to the Power Platform Admin center and follow below below steps to get the sales professional installed on the environment.
Also you will able to see many other apps in the list, if you need those apps then just follow the same procedure.

Sales Pro app is disabled for Trail environment.

I think it's not possible to choose version in trial subscription.
It's Premium out of the box and you can't change it,
