The answer is yes. You can setup a separate Item instead of using Variants. In fact, that is sometimes recommmended because Variant Codes are not "required" for an Item, so I have seen inconsistent application Variant Codes without having a way to "require Variant Code" on the Item Card.
In addition, you may want to consider the use of Item Substitutions for linking similar Items so that if an Item is not in stock, you can take advantage of the Item Substitutions to be able to see related Items with similar characteristics that have stock.
