Working on the UI the Book button in missing on the Work Order:
while it is available in the standard UI. How can I enable it?
Yes there is a display rule as explained in my previous post, it is something that Microsoft developed. When I remove the display rule the book button appears but the schedule board does not load, so it seems that Microsoft is hiding the button on purpose.
I saw another solution on another thread referencing:
"After granting Org level read permission for Booking Setup Metadata, the issues seems to have been resolved. User can see the BOOK button and use the Schedule Board without any issues."
Have you checked if there is any display rule is added in the ribbon? you can check it using ribbon workbench.
Also you can open a case with Microsoft support for detailed check.
Neither after the last upgrade the Book button appeared, here is the last version of d365 instance we have installed:

Server version: 9.1.0000.21653
Client version: 1.4.1326-2008.1
It seems is previous than the one you wrote 9.1.0000.22231
Still the button appear in the standard interface but not in the UnifiedInterface. Using RibbonWorkbanch I found the following display rule is preventing the book button to be displayed
Even if it is not correct to customize a standard button I did it removing that display rule, now the button is visualized but the ScheduleBoard does not load in the popup as it does for the Standard interface

We verified that it is coming properly in UCI client. My org version 9.1.0000.22231
Please check if this issue is appearing for all users. If yes please check if you have done any ribbon customization or Imported any solution with ribbon customization.
Also you can open a case with Microsoft for detailed check.
Have you tried Command Checker (powerapps.microsoft.com/.../ )? This may tell you why the buttons are hidden.
