Just a quick question . when we make email status as Completed,after that locking all fields is that out of the box feature?.

Yes it is OOB feature.
When you mark email status as completed all fields on the form will be read only.
This is applicable for many other entities such as Case Entity when Status is Resolved or cancelled all fuelds on the form become read only.
