Is there a way to enter the type of order when entering the order?
For example when I am entering the order, is there anywhere I can mark this order as a Fax Order? or a Customer Order? Or Phone Order?

Do you mean Sales Order Processing under the Setup?
You can go into the SOP Setup and go to Bottom left: Sales Document Setup>> Order and create the type of order you want it to be FAXORDER, CUSTORDER, PHORDER and you can have separate numbering on each order. You can go to Help about this window to complete setup on these documents
