Hi,
Is there any way to set a work-space as the default work-space when the user log in the system, and don't allow the user to change?

Would agree with Rahul. But the above fields are available on User -> Options page that user has access to change. So if you don't want user to change the workspace, then you have to figure out how to disable either this field or entire user options (don't like disable option in entirety).
Suggest that you handle through training rather than customization.
Alternative is, have the workspace that you want default as 'Favorite' then assign the workspace Essentials and the favorites would show up there.. See screenshot below.
If it's a custom workspace then you have to add to the list of workspaces on the user options form through customization. We have done similar thing.
If it's out of the workspace then you have to set that workspace to all users through script on user options and disable only that field or form through security.
If you want to add that workspaces to be assigned automatically to new users when you create them consider that as a small customization as well.
