What does a new Document Type in GP mean?

I am reading this page about GP web sercices and they say that when you create a new document type in GP you must also create a new document assembly for web services.

So my question is, what exactly is a new GP Document? Is it something you would do in Dexterity or is there an admin screen in GP where you create new documents? Or is it specific to GP web services only?

    A new GP Document is one you or an ISV created or is not already covered by the exiting web-service API.

    I don't fully understand your answer. Perhaps this will help to clarify what a GP document is: what steps might I take to create a new document?

    A GP document in this context is normally referring to one of the base types of document within GP that the the user would interact with.

    Examples of documents are such as sales orders, invoices, quotations, goods receipts, purchase orders etc.
