That is one way to write off outstanding balances and is the easiest method. However, the process will default to the GL account as defined in AR setup for write-offs. The screen does allow you to use a different account if desired. Also, you will have to set the write-off limit on this screen to a value large enough to cover the document amount you are trying to write off which will likely end up showing far more documents in the grid (when you click on the find documents button) then expected so be careful to only check the actual documents you want to write off.
The other method is to create a credit memo (for writing off an invoice or debit memo) or a debit memo (for writing off a credit memo) using the invoice and memo screen and then using payment application to match up the memo you created and the outstanding item you are trying to write off. This method, while taking more steps, gives you a bit more control plus the ability to add a note to the credit memo or debit memo you create explaining the reason for the write off.
When using the small balance write of screen you select the type of balance, the GL account you want the write-off to go to (note: this is not a receivable account), the write off limit (which is used to display which documents are available in the grid), and optionally, a customer id. All you do in the grid is select the documents you want written off.
