GP 10 Compatibility with 64 Bit Server 2008 R2 and Office 2013

I wanted to see if anyone had any comments about this or has had to do this before.

We have a large GP 10.0 Install that we have been using for a long time (started up before my time, possibly late 90's and has been upgraded since).  Long story short, we are migrating our entire ERP system onto PeopleSoft, but as of today, our main system is GP 10.0.  Everything ends up in there from whatever integrated ERP systems we have.

We have a bunch of 3rd Party Tools (Mekorma, Rockton, Forms Printer, etc..) and a TON of customizations.  Modified forms,  .Net eConnect integrations, Webservices, VBA code, dll add-ins, etc...  I know GP 10.0 is old, we should upgrade, but it is so customized, it just isn't worth the money and time testing (60+ companies, 100+ users, testing all the tools, etc..) since in the next few years we will be all in PeopleSoft.

Problem is, we are running this on Server 2003 (5 Servers and Citrix) and the Infrastructure team is telling us we can't be on Server 2003 anymore.  The whole company is on Office 365 now (exchange on the cloud).

So I asked them to give me a Server 2008 R2 64 Bit Server to see if I could turn it into a working Application server running Office 2013.  None of those appears to be supported with our version of GP 10.0 (I think we are only on like Service pack 1 )10.00.1061.

But after a few hacks and tweaks, everything seems to be working fine in my test environment.  No issues with Office (Word, Outlook and Excel).  Or GP for that matter.  Which surprises me since there is a reason why they put out system requirements.  

Am I missing something here?  Am I going to get any hidden treasures of something that doesn't work?  Admittedly, I haven't put all the functionality into heavy testing, but everything I have tried so far seems to be working just fine. 

What I am really looking for are some suggestions as to what to look for from some of you experts who have clients on different versions of GP on different operating systems that have done upgrades or even things that aren't supported.  My experience is mostly with this one install of GP, I know all the customization and know what to expect (what is working and what isn't).  We basically use GL, FA, Sales and Purchasing, so we aren't using all the intense features of GP.  So maybe when you use things like Sharepoint, Business Portal, approval workflows and some more advanced features, I can understand some compatibility issues, but in terms of Office, we export Smartlists to Excel (works fine), pretty much don't use Word, and Email things using Outlook.  I just don't want to invest a lot of time if there is something obvious that just simply isn't going to work.
