How can I add Opportunities assigned to someone else to my queue to make them easier to monitor? Is this even possible? Currently, I have to search through all of our Opportunities to find the ones I'm looking for, and it's getting labor intensive.

Depending on your scenario, you can try following approaches:

Ownership Team: you can create teams and add sales users and your user to the team. Assign the opportunities to the team, this way you can also see the opportunities in My Opportunities view.

Sales Team Member: sales person add you as Sales Team Member in the Opportunity. This way you can see the opportunities you are added to in the "Opportunities I am member of" view:

Share: sales users can share the opportunities with you (without assigning to you), this way you can see the interested opportunities as per given permissions (while sharing):

Views: If you cannot assign leads to a team, create views to find the leads you need to work on. For example, create a view called "Leads I'm interested In" and set the filter as per you need (like Business Unit = Sales, Status = Open, Created in Last 7 Days, Assigned to User X etc.).
