We need to implement our jobs in such a way that work hours flow into the invoices. Its also important to differentiate between night shifts and so on. As far I as now business central only has a basic timesheet you can use.

How would you implement something similar?

Kaspars is spot on. Be sure to set your Line Type to "Billable" so that the Job Journal posting creates Billable Job Planning Lines which make invoicing the time easy.

How would you go on implementing a system where work hours are central to the invoices

Use Job Module and Time sheets for the users to log their hours.
Then Generate Lines in Job Journal and post them.
Afterwards generate invoices.

For night shifts You can do a separate Work Type, that has a separate price for each Resource.
