We have base language set as English, If we were to have a user in Spain - they would set their user interface language to Spanish.
If I were to write notes on a case, telephone call activity etc would the user interface language show them that text in Spanish? Similarly, if they were to enter in Spanish, would my English user interface language present their notes in English?
OR will the interface language only translate the field names etc on the forms?

Navigation/Display Names for Entities/Fields/Display Labels for optionsets can be localized because it is metadata but the data (like notes, field values e.t.c. won't be translated). Data itself (like notes that you mentioned) won't be translated.
