Could you please help me do so? What date should I use then?

Since they are or were employees, I assume you can still contact the ones that are no longer with you and let them know about the windfall :-) otherwise you may need to send their money to the California's Unclaimed Property - https://ucpi.sco.ca.gov/UCP/
For the existing ones, you can certainly void and reissue the checks. Assuming 2015 and 2016 are closed you will want to void those in the current period to avoid any confusion.

I am California. Some of the payees are our employees so I think I would reissue another check for them and void the old ones. What date would I use to void then?
For others, I would follow your advice.

Handling of outstanding checks will greatly depend on where you are located. However, voiding the checks are not the solution since, technically speaking, you would be reverting the associated invoices to open and this is not true as you don't owe those invoices anymore.
Again, not sure where you are located, but most states in the United States would want you to turn over the uncollected money to the Unclaimed Property Division of the state - www.thebalance.com/outstanding-checks-315275
