I have an item that has variants with separate UPC numbers and inventory. Can I enforce when receiving goods for that item in purchase orders or making a sales in Sales that a variant is chosen? as currently I am able to receive goods or make a sale without choosing a variant if I wish. This is prone to create errors in my inventory.

To enforce that, you need a customization (for example to check that Item Variant No. will never be empty).
