Category hierarchy type explained

I am looking into using category hierarchy as a way of assigning attributes to items. We need a way to have an external database fetch information about items depending on the attributes. 
However I cannot find any good information about the diffrent category hierarchy types and what the purpose of them is. 
 
To try and explain in a bit more detail: 
We have an external database that contains tons of information regarding the items, for example product documentation, instruction manuals and EPD. 
We want to be able to connect this database to D365 using attributes that are tied to the items using a Category hierachy. 
At this moment the best way to do this we have found is to use either the retail or commerce category hierarchy type. But i would really like to understand what all the category hierarchy types are and how they work.

Sales
Commerce
Commodity
Derived financial
Supplemental retail
Retail channel navigation
Packing material
Common data
Cost management
Traceability

    At this moment the only ones that seems viable is Commerce, Retail channel or Procurement

    4. Project Category Hierarchy: This type is used for organizing items based on project attributes. It allows you to structure items related to specific projects, such as phases, tasks, or deliverables.
