I have set the following property in my Dynamics 365 Environment and it does what it says.

Set To,cc,bcc fields as unresolved values if multiple matches are found in Incoming Emails.
Yes

So what i do with unresolved email addresses is to resolve them by opening the email....

However in the outlook app the recipients does not resolve to the correct contact?  

In the attachment below you will notice the email was sent to Mikel and email was resolved to Mikel but when you view the outlook app, it says recipients is Edu?

Why not add the option to change recipients in the app in the first place?
