BP is working on the 'sandbox' and we want to point it to the 'staging' GP install. Some customizations have been done to the site.
We can't change the SQL backend server that it's looking at through Add/Remove features or SQL configuration.

Thanks Rob. I tried that but it didn't work.
I've uninstalled and re-installed. Now the company drop down is blank but when setting up the roles the sites are there.

Just to be clear, you have BP working on a web server that is pointing to Sql Server A. You'd like your BP server to point to Sql Server B?
If that is the case, I believe this is possible. Look in the SharePoint bin folder. If your SharePoint site is on port 80, it would be here: D:\inetpub\wwwroot\wss\VirtualDirectories\80\bin. Search within the config files for any reference to Sql Server A. They will need to be updated. You'll also need to add your BP user to your Sql Server and have it match your ~privatefile.dbauthentication.config. You could also contact support to see if they have any advice.
