I wanted to check if we can apply the custom controls for the following fields
1) Composite 2) date and time 3)multiple lines of text 4)single line of text 5)lookup

There are multiple custom controls available in dynamics 365 following link will help you to get idea of existing custom controls.
There is custom control is available for date and time field however I doubt you will use it.If you want to find out custom control for field go to entity form click on field and select change property there you can see custom control tab where you can see available custom control for fields
however you can develop your own custom control using typescript but I don't suggest that because It is little bit difficult to design and test in dynamics.
