I was wondering if we can use Dynamics 365 Retail for HQ and stores, but using other POS system?

Retail Server is ODATA endpoint, therefore, from technical point of view (I'm not speaking about licensing and support, for that I recommend contacting official Support/Sales department) you can create any client capable of "talking" ODATA, while doing so you could use either managed proxy or TypeScript one.
Why you cannot/don't want to use CPOS/MPOS ?
In Cloud Version there will not much difference.
