Today, in my Activity List, I have the owner of the activity shown.
What if we want to have the person who has actually performed the activity, shown instead of?
You can try adding and using the modified by user lookup field in the view.
This will let you know who last modified the activity.
If you are talking about the activity pane then there is no way to edit which fields are displayed on it, unfortunately.
If you're using queues then you could list queue items, and have the "worked on by" field in the list view.
Else, if it's just a normal list view of activities, then you can do as Mihir says. Be aware that the "modified by" field will be updated whenever the record is updated, so if you have any automated tasks (workflows, plugins, etc) they will also update the modified by field if they perform changes on a record.
