Do you know why the Filed Service settings from Administration defaults to Read Only? I am an Administrator and Filed Service Administrator.
Think the only way for you to do it is either upgrade to the latest Field Service. Or you will have to use the Web UI version of Field Service 'Dynamics 365 - custom'
It seems to be an issue with a specific version of Field Service.
It works with the legacy web interface. I have version 9.0. I can live with this now until 10.0
I had a very similar issue with the Customer Asset form. Same applies to the Field Service Settings form: Check in Customization Area (Solution) at the Entity settings for "Field Service Settings"-Entity, there is a Flag "Read Only on Mobile". Remove the Flag here and voila, your problem is solved.
