I am setting up a newsletter mailing and I wonder how D365 Sales users get analytics for mailings?
Do Dynamics offer such functionality or are you using an external service? If the later, I'd love to have your recommendations.

There are many options/solutions, it depends on your current license solution.
Let me give you a brief on what options are available.
To get the statistics on the emails in Dynamics 365 Sales, you can use Sales Insights.
Sales Insights have a feature called Email Engagement to track and get statistics on emails.
Please look at the following docs to understand the functionality:

However, Sales Insights is not available for Dynamics 365 Sales Professional, if you are using Dynamics 365 Sales Enterprise, or Premium, it is available out of the box, you just have to configure it:
Now, If you do not have Sales Enterprise or Premium licenses, you have the following options:
Marketing – Customer Journey | Microsoft Dynamics 365
Marketing Automation Software Solution | ClickDimensions
Please note, email statistics is just one of the features available in above mentioned tool, you can do a lot more.

Based on my setup and budget, I guess that Mailchimp is the most appropriate solution.

Wahaj Rashid did an awesome job (as usual!) of laying out the MS options. However, based on your last post, I gather that none of those fit your budget constraints. And yes, D365 Marketing is quite pricey. If you're going to go the Mailchimp route (which is perfectly acceptable, BTW), may I also suggest looking into a product called SyncApps by Cazoomi? They provide a very cost-effective prebuilt connector:
