Hi thogue. Hmm what is the solution version of PSA that you are running? A good place to check is the D365 admin center. All these features are standard OOTB features so you should be able to access them. I suggest upgrading PSA to the latest version in your dev environment first and if you still can't see them, a Service Request to MSFT would be the way to proceed.

I recently upgraded D365 to V 9.0.1.621, and my PSA doesn't look like yours. The Scheduling board doesn't match and Specify Pattern is not available. When you choose the record to book, I only have Hard Book as an option.
