When I try to enter a new opportunity, it is not allowing me to save it and has the following message below. I am able to enter other opportunities just fine.
Business Management ERROR :The user ID associated with the current record is not valid
It looks like user assigned to new opportunity is deactivate. Either you need to activate user or need to change logic to assign record to active user.
Seems the user in AD having authorization issue , what changes you did recently with this particular user ?
Can you check whether the same opportunity can open by another user or not. If yes then there should be issue with the login user , you can just change the user name and save the user and try open the particular opportunity again.
Are you able to create new Opportunity? What happen when you trying to update newly created opportunity?
We only have 1 CRM user, he is able to create other new opportunities just fine (and update existing ones).
Can you please check in the event viewer and share more details of the error.

There have been no changes to this user in CRM. This is not an AD authorization issue, he can create new opportunities and update existing ones just fine.

As per error details the error is coming from USD.CRM.Plugins: USD.CRM.Plugins.PostOpportunityCreate plugin ,Not sure is it custom plugin?
Can you please deactivate this plugin steps by going to settings - > customization-> Customize the system- > SDK message processing steps and see it's working or not.
I have a ticket open with Microsoft, I will update you with the solution.
