Out User have their personal tracking option set to "Email Messages in response to Dynamics 365 Email".
The issue is every email that is sent to him and not just response to Dynamics 365 email gets track in CRM. How do we fix this?
We only want, that emails and the responses of this emails are tracked in CRM, when an user klick set regarding.

Firstly, I would check if there is another mailbox using the same smtp address defined for this user. Also, if the personal settings of user mailbox is defined only to track "Email Messages in response to Dynamics 365 Email", please check if the Folder Tracking (Use folder-level tracking for Exchange folders (server-side synchronization must be enabled)) is enabled for your organization: Configure Outlook or Exchange folder-level tracking - Power Platform | Microsoft DocsThanks,
