I have a question about configuring and using Dynamics 365 App for Outlook. The CRM Version is 9.1 on-premises. Outlook is also on-premises.
I was checking the configurations that need to be done on the Exchange Infrastructur.
Is OAuth-Authentifizierung in Exchange definitiely reuqired to use the dynamics 365 App for Outlook? Or does it also work without activating OAuth in Exchange?
To answer your question, yes Oauth is required in Exchange to use the App for Outlook. If it is not enabled you will receive a "cannot connect to Exchange" error.
Per our documentation you can see it listed as a prerequisite:

Dynamics 365 App for Outlook is an Outlook add-in that uses Exchange Web Services (EWS) to interact with Microsoft Exchange. This requires OAuth be enabled on Microsoft Exchange. For more information: Authentication and permission considerations for the makeEwsRequestAsync method.
