Is there ever an instance when D365 users would have access or function issues when their email address is changed? Not to confuse a UPN changing in Entra, but solely their email address?
I don't believe it should. Any email actions or other automations should reference the email field on the user record at the time it is called. You will want to make sure the email address of the user is not being populated onto related records, however (it doesn't do this by default anywhere in CRM, but you may have customizations doing it).
